110g Butter or Margarine
110g Caster Sugar
2 tsp Egg Replacement (EnergEgg)
1 tsp Vanilla Bean Paste or Vanilla Essence
110g Self-Raising Flour (Gluten Free!)
1 tsp of water.
120g Icing Sugar
A few drops of natural food colouring
1) Cream butter & sugar until pale. Add egg-replacement and vanilla paste.
2) Fold in flour and transfer into paper cases.
3) Bake in Oven for 22 minutes at 180 degrees Centigrade until a metal skewer comes out clean.
4) For Buttercream: beat butter in bowl and add half the icing sugar and a few drops of colouring. Add remaining icing sugar and pipe onto cooled cakes.
5) Eat and Enjoy.
I would recommend sieving the flour to add air into the mix and adding edible glitter to make your cakes glamorous!
