Recipe: Gluten Free (White) Homemade Bread (in Breadmaker)

Homemade Gluten Free Bread

Not sure if the yeast was fresh enough (although it was in date as the loaf didn’t rise as much as we expected).

Mix together:
2 egg whites (or egg replacement as I used)
1teaspoon cider vinegar
2 tablespoons oil
3/4 pt. soya milk and water mix ( tepid best )
Pour into bread machine

To this add:
1teaspoon salt
16oz self raising Gluten Free flour
1teaspoon sugar
2 teaspoons Xanthum  gum
3 teaspoons bread maker friendly (and gluten free ) yeast.

Used  a rapid, dark crust programme. Remove from pan as soon as cooked, cool, slice and either enjoy or freeze.

Quite important to add ingredients to pan in this order. Salt directly onto yeast retards it, sugar and Xanthum aid it.

Found it toasts really well and although our crust is a little odd looking, it tasted really well although I did trim off the top!
