250g Self Raising Gluten Free Flour
1 tsp Cinnamon
130g Caster Sugar
50g Melted Butter
2 large eggs or 3 tsp of Egg Replacer
1/4 pint of Soya Milk
5 apples (any variety)
15ml Melted Butter
30ml Caster Sugar
1/4 tsp Cinnamon
1) Make Cake: Sift flour & cinnamon into bowl. Stir in caster sugar. In a separate bowl, whisk melted butter, eggs (or egg replacer) with milk, then stir into dry ingredients.
2) Pour into lined tray and make shallow hollow in middle.
3) Make Topping: Peel and core apples, and cut into slices. Arrange in cake mix and brush with melted butter, scatter sugar and sprinkle cinnamon over the top.
4) Bake for 50 minutes until well risen and golden and a skewer comes out clean. Remove from tin and cool on wire rack.
