For the sauce:
1 clove of Garlic.
3 tablespoons of White wine vinegar.
6 tablespoons of (Gluten Free) Soy sauce.
4 tablespoons of tomato puree/ chopped tomato.
1 teaspoon of Mustard Powder.
2 tablespoons of honey.
1 tablespoon of soft brown sugar.
Freshly milled Black pepper.
First crush the garlic in a bowl adding the white wine vinegar and soy sauce. Stir in the tomato puree, followed by the mustard, then the brown sugar, the honey and season with pepper.
Leave the sauce to develop and when ready, brush the ribs with the sauce every 15 minutes whilst cooking to enable the flavours to be added.
This recipe provided a good BBQ although I would play with the amount of liquid so more sauce is made and perhaps add some paprika or chilli for an added kick.
