Recipe: Gluten Free & Dairy Free Jammy Pancakes

Pancake summary

Ingredients: 110g Gluten Free Plain Flour (Dove Farm is what I used) /pinch of salt /2 real eggs or egg replacement /200ml soya milk (other non-cows milk variations work just as well) /75ml water /50g non-dairy spread.

Method:

  1. Sift the flour into a large bowl and add the salt. Make a well in the centre and add the real eggs /egg replacement, mixing with the flour. Gradually add the mixed milk and water whilst whisking until all flour has been blended and it is of the consistency of a thin cream. Leave to stand. (I left mine for 45 minutes which I think helps settle the batter. I did give it a quick whisk before using).
  2. Heat the non-dairy spread in the frying pan on a medium heat and pour the liquid into a small bowl. Using a teaspoon add the melted liquid to the frying pan to lightly grease the pan. Test with a small drop of batter: if the pan is too hot, the mixture will bubble and could ruin so a medium heat is recommended.
  3. Using a ladle and moving the pan as the batter hits the pan, you will quickly fill the bottom of the pan and cover any gaps. Once the batter is cooking, using the back of a wooden spoon or spatula, squeeze in the edges of the pancake to help it keep it’s circular shape. This padding in helps in lifting the pancake over to cook the other side.
  4. Once cooked, I found keeping the cooked ones on individual greaseproof paper in a heated oven takes the pressure off speed. It allowed me to concentrate on them individually as the mix made six large pancakes.

Jammy pancakes

In this recipe, I kept to traditional fillings and used (shop bought) jam. The Strawberry Jam spread easily and peppers the pancake with bite-size whole strawberries and the Marmalade jam added a citrus flavour to the pancakes with added candied orange pieces. Both were dusted with sugar and tasted divine! I rolled them up but kept them just a little open so I could eat with my eyes as well!

Otherwise, there is lemon juice, Honey, Chocolate, Nutella (which is GLUTEN FREE! http://www.nutellausa.com/faqs.htm ), Peanut Butter, Bananas, Strawberries, raspberries…

… the list is endless so just enjoy your GLUTEN FREE Pancakes
