Product Reviews, Restaurant Reviews and Recipes: All GLUTEN FREE!
Ingredients: Chicken/ Crumbs (I used Orgran GF Corn Crispy Crumbs) / Egg or Egg substitute (I used Ener-G egg replacer) /Plain GF Flour
1) Put flour, made-up egg replacement /eggs, and crumbs in three separate shallow bowls.
2) Pound chicken into flat pieces and season both sides with salt and pepper.
3) Dip into flour, then shake, next the egg, letting the excess drip off and finally the crumbs.
4) Place on oventray and bake in oven for 20 minutes T 220 Degree Centigrade until crisp and golden.
Lovely crisp pieces of chicken with a crunchy crumb covering. If I was feeling naughty, an alternative to baking in the oven is frying but this adds to the fat content of the meat.
Of course, this was GLUTEN FREE!
