Recipe: Homemade Meat Loaf (with Genius Frozen Puff Pastry)

Meatloaf made with Genuis Puff Pastry


Defrosted Genius Frozen Puff pastry / GF Sausages (x6) /2 slices of GF Black Pudding /Dried Mixed Herbs/ Large Onion finely chopped/ Garlic clove /Mushrooms / Butter /Soya Milk (for brushing pastry)

  1. Defrost the pastry and bring to room-temperature. Envelope in Clingfilm and using rolling pin, spread until thin flat surface in rectangular shape. Place back in fridge to keep cool.
  2. Put butter in pan and melt. Add finely chopped mushrooms with a crushed clove of garlic. Cook until soft and then cool for at least 1 hour.
  3. Unwrap sausage meat from sausage casing and mix with chopped onion, chopped black pudding and dried herbs. Split into half and place in the middle of rectangular pastry piece. And a thin layer of black pudding to one side of the sausage meat and flatten. Add the cooled mushroom mix down one side of the filling.
  4. Bring up one side of the pastry using the clingfilm so as to seal the pastry around the sausage meat.
  5. Sprinkle with dried mixed herbs and brush with soya milk.
  6. Place in oven for 25 minutes at 200 Degree Centigrade (until the pastry is brown and tanned).
  7. Enjoy when hot or warm!

Little risen puff pastry

Really impressed with the frozen pastry. Yes, when you roll it out, you can see the layers of butter in the raw pastry which is reassuring. And from the end-product of my meatloaf, it turned out light but not that flaky or puffy. The sausage meat was tasty with the added flavour of the black-pudding (which was reviewed in a previous blog post as it is also GLUTEN FREE!). I think it could have been cooked for a longer period, which might have encouraged more defined layers of flaky pastry so I will definitely try this recipe again. The convenience of having a pre-made puff pastry which you roll out is exciting and so many other sweet and savoury recipes to try. Thank you Genius!

To store, rest in an air-tight container although these didn’t last that long as they were yummy!
