Using “Genius” Frozen Short Crust Pastry to make my pie. (Purchased in Asda: Click & Collect). The pastry (obviously) requires defrosting but it easy to use. I cut the block into two pieces and roll it out, wrapped in a large sheet of clingfilm. This allows me to move it (and lift it onto the pie dish) and reduces the amount of mess in the kitchen. (I have found if it gets stuck inbetween the Cling, you can put the whole sheet into the fridge and after five minutes, it is easier to peel back the Cling and use the pastry). http://www.geniusglutenfree.com/our-range/pastry-pies/shortcrust-pastry
For the filling, I used Chicken breast, Pancetta, leeks, mushrooms and chicken stock (with added GF flour to thicken).
Ingredients of the Pastry:
Maize Starch, Shortening (Palm Oil, Rapeseed Oil), Water, Dextrose, Dried Egg, Potato Starch, Stabiliser (Xanthan Gum), Raising Agents (Disodium Diphosphate, Potassium Bicarbonate), Rice Flour.

The pastry is really tasty: a mixture of crumbly soft pastry which keeps its shape. It is light and delicious and although I cheated with only a pie-crust, it was quick, easy and ready-to-make. And of course GLUTEN FREE, DAIRY FREE and WHEAT FREE!
