Product Review: “Made without Wheat” Lemon Sponge Cake (by M&S)

Having already enjoyed several of the Victoria Sponge Cakes (GF) from M&S when I saw this new variation, I had to try it. It is also well packed in an air-tight bag within the cardboard box) so it didn’t get crushed enroute home. It is a moist light lemon sponge with a good thick layer of  buttercream both on the top as well as half-way down the cake. In fact the flavours of lemon do come through all elements of the cake: the buttercream as well as the sponge. The only noticeable difference between the layers is the top of the cake has a few pieces of lemon zest and that’s where the cake fails. If you read my blog post on the Victoria Sponge Cake you will see that one of the pleasures of that product is the strawberry jam as well as the creamy buttercream and unfortunately this cake mix doesn’t tick the same boxes!
